Our charcuterie hams are naturally cured without the use of artificial nitrites using sea salt, cultured celery powder, spices, and vinegar powder. We slow-smoke our hams for 10 to 12 hours over real hickory wood, resulting in soft, succulent ham with a faintly smokey flavor.
